Latvia - Sweet carrots salads (saldie burkānu salāti)
Ingredients:
Fresh carrotsOranges
Canned pineapples
Directions:
Peel the carrots and grate them. Peel the oranges and cut in the small pieces. The pineapples take out of the syrup and cut in the small pieces. All ingredients put in the bowl and mix them.

Directions:

Latvia - Fruit salads with cottage cheese cream (augļu salāti ar biezpiena krēmu)
Ingredients:
- 5 apples
- 3 bananas
- 3 pears
- 2 oranges
- 1 small melon
- cottage cheese
- raisins
- whipped cream
- sugar
Directions:
Peel the melon, bananas, pears, oranges and apples. Grate apples. Other fruits cut into small pieces.All the fruits mix togeather in a in bowl.
Beat sugar with whipped cream. Mix cottage cheese, raisins and whipped cream.
Serve and taste it!

Latvia - Boys baked pancakes with lingonberry jam (pankūkas ar brūkleņu ievārījumu)
Ingredients:
1.5 cups flour2 eggs
1 cup milk
1 cup water
sugar
salt
1.5 tablespoons oil
lingonberry jam
Directions:
In a bowl mix the eggs. Add oil, flour, sugar, a pinch of salt and mix everything.Stirring constantly, add the milk and water until pancake dough are without lumps. It is important to pour the liquid slowly and gradually.
Pour the oil in a pan and heated. With a cup pour batter into pan. When the pancake from the one side is golden then inverts it to the other side. Pancakes should be thin.

Latvia - Apple porridge with cloudberry jam (ābolu putra ar lāceņu ievārījumu)
Ingredients:
- 300 g of oat flakes
- milk
- 1 tablespoon sugar
- 3 apples
- 1 tablespoon butter
- 1/2 tsp. cinnamon
- pinch of salt
Directions:
In the milk pour oat flakes. Add salt, sugar, butter, cinnamon and finely chopped apples. When the porridge is ready, serve it with cloudberry jam.
Oatmeal hide a miraculous power!

Poland- Zucchini chocolate cake
Ingredients:
- 1,5 mug millet flour
- 6 tablespoons cane sugar or birch sugar
- 4 teaspoons cocoa
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- pinch of salt
- 7 tablespoons ground flax seed
- 7 tablespoons pumpkin seeds
- 1/2 glass cooking oil
- 1 glass water
- 2 eggs
- 1,5 mug grated zucchini
Directions:
Prepare two bowls. Stir dry ingredients in the first one. Stir eggs, cooking oil, water and grated zucchini in the second bowl. Mix all the ingredients and stir them carefully. Preheat your oven to 200°C. Bake for about 40 min.

Poland-Potato casserole
YUMMY!!!
2 onions
2 cloves of garlic
30 dag minced meat
2 tablespoons
cooking oil
1 tablespoon mustard
1/5 tablespoon
tomato paste
salt
pepper
1 tablespoon thyme
1 tablespoon
marjoram
1 tablespoon
rosemary
|
Peel, chop and gently fry onions. Add minced meat. Add mustard, tomato paste, mashed garlic. Season.

2 leeks
|
Slice cleaned leeks. Stew in 4 tablespoons of water (approx. 5 minutes)
|
80 dag potatoes
|
Peel and cook potatoes (do not
dice and remember not to overcook )
Slice when cold.

3 tomatoes
|
Chop peeled tomatoes.
|
15 dag cheese
|
Grate cheese.
|
Put all the layers in
a casserole dish. Salt each layer:

Poland-Rice noodles salad
Ingredients:
200 g rice noodles
200 g canned ham
1 can of corn
1 leek
4 tablespoons mayonnaise
salt, pepper
Directions:
Slice a blanched leek.
Dice ham. Add blanched noodles and the ingredients. Season.

Pumpkin Pancakes Recipe
Ingredients:
- 1
kilo pumpkin (peeled)
- 1 glass
buckwheat flour
- 2 tablespoons
potato flour
- salt
-1/2
teaspoon cinnamon
- cooking
oil
Directions:
Grate
pumpkin (larger strands) Add flour, spices. Stir. Heat oil on the frying pan. Fry on
both sides, until golden. Serve hot.
