Spain: Little carrot cakes

INGREDIENTS:
500 gr of carrots
200 gr of sugar
200 gr of grated coconut
flat muffins
melted sugar and water where the carrots have been boiled
chocolate syrup

PREPARATION:
1.   We boil the carrots and grind them, then we mix them with sugar and coconut.
2.   We put the flat muffins in a tray and we water them with the mix of the melted sugar and water.
3.   We fill the flat muffins with the mix of the carrots with sugar and coconut and we put another layer of flat muffin over them.

4.   Enjoy them!
